☕️ Coffee 101: The Truth About Bean Density, Oils, Mold, and Roast Levels

Welcome to the Official Coffee Blog of Livingston Parish’s Favorite Roaster – French Settlement Roasting Co. Whether you’re a daily sipper, a coffee snob, or someone who just loves the aroma of a fresh grind—this deep dive into the science of coffee beans will leave you brewing smarter.

🌱 Bean Density: Why It Matters

What is Bean Density?
Bean density refers to how tightly packed the cellular structure of a coffee bean is. Higher-altitude beans tend to grow slower and denser, producing more complex and desirable flavors.

Why You Should Care

  • Dense beans = better quality
  • Roasts more evenly
  • Holds up better in espresso machines
  • More resistant to over-extraction

French Settlement Insight: We source high-altitude, specialty-grade beans to ensure maximum density, flavor, and aroma.

☕ Surface Oils: Sign of Quality or Age?

Oil on your beans? Here’s the truth:
As coffee beans age or are roasted darker, natural oils migrate from inside the bean to the surface.

What this means:
✅ For dark roasts like our Jet Fuel Blend, surface oils are natural and expected. At French Settlement Roasting Co, we often roast to the brink of oil development—just enough to unlock bold flavors and deepen complexity without tipping into bitterness or burning the bean. This careful balance delivers richness without sacrificing smoothness.

Pro Tip: Store your coffee in an airtight, opaque container to reduce oxidation and prolong life.

☣️ Mold in Coffee: What You Need to Know

Is mold in coffee real?
Yes. Poor farming, storage, or roasting practices can lead to mycotoxins—harmful compounds created by mold.

What makes FS Roasting Co different?

  • We only source organic, mold-free beans
  • Lab-tested for quality
  • Roasted to order to prevent mold risk from long-term storage

Bottom Line: Not all coffee is created equal. We pride ourselves in being mold-free, toxin-free, and always fresh.

🔥 Roast Levels Explained: Light, Medium, Dark

Light Roast:

  • Bright, acidic
  • Best for single origin
  • Retains bean origin flavor

Medium Roast:

  • Balanced flavor and body
  • Sweet, nutty, and smooth
  • Fan favorite at French Settlement!

Dark Roast:

  • Bold, smoky, and rich
  • Lower acidity
  • Perfect for milk-based drinks and espresso

🧠 Bonus: Quick Coffee Science Glossary

  • Chaff – Outer skin of the bean that sheds during roasting
  • Degassing – Natural CO₂ release after roasting
  • Crack (First/Second) – Audible popping that signals roast development stages
  • Maillard Reaction – Where flavor magic happens during roasting

🧼 Storage & Freshness Tips

  • Keep coffee in a cool, dark cabinet (NOT the fridge)
  • Always grind right before brewing

      Hey there!
Thank you so much for taking the time to check out the blog — that truly means a lot. I’m glad you found the coffee education helpful!
That’s a tough question, but if I had to pick a personal favorite, Bloody Angola is always near the top. Those dark chocolate notes with a bold, smooth finish make it an easy go-to, especially if you enjoy a richer cup.
And yes — you can absolutely purchase whole beans or ground coffee. We recommend whole bean if you’re grinding at home, but we’re happy to grind it for you to match your brew method if that’s easier.
If you decide to give Bloody Angola a try, I’d love to hear what you think!

Hi, I was given as a Christmas gift, two of the FS coffees ( Honduran and Colombian). My wife’s family comes from Corsican emigrants in the 1800’s to Puerto Rico, growing coffee at over 3000 feet, so we know coffee…
Your coffee is amazing! I look forward to buy more and explore the different types of FS coffee. Buen Cafè!

Thank you so much for this—truly means a lot to me.
Knowing your wife’s family history with Corsican emigrants growing coffee in Puerto Rico at elevation makes this even more special. That’s real, generational coffee knowledge, so hearing that you enjoyed our Honduran and Colombian coffees is incredibly humbling.
I put a lot of care into sourcing and roasting to let each origin speak for itself, and I’m honored our coffee lived up to your expectations. I really appreciate the kind words and look forward to you trying more from our lineup.
Thanks again for the support—it means more than you know.
