What Is Pour Over Coffee?
Pour over coffee is a manual brewing method where hot water is poured over coffee grounds in a filter. The water passes through the coffee and filter into a cup or carafe below.
Pour over brewing gives you more control over flavor than many automatic methods. You control the grind size, water temperature, pouring speed, brew time, and coffee-to-water ratio.
Clean Flavor
Paper filters create a clean cup with less sediment and more clarity.
More Control
You control how the water contacts the coffee, which can improve sweetness and balance.
Great for Single Origins
Pour over brewing is excellent for highlighting origin coffees like Peru, Colombian, and Honduran coffee.
Why Pour Over Coffee Tastes Different
Pour over coffee often tastes cleaner and more detailed than heavier brewing methods because the paper filter removes some oils and sediment while allowing the coffee’s aroma, sweetness, and flavor notes to shine.
- Cleaner cup than French Press
- More flavor clarity
- Great for specialty-grade coffee
- Excellent for single-origin coffees
- More control over extraction
- Easy to adjust stronger or lighter
Pour Over Coffee Ratio
A strong starting point for pour over coffee is a 1:16 coffee-to-water ratio. That means 1 gram of coffee for every 16 grams of water.
Golden starting ratio: 1 part coffee to 16 parts water. Use slightly more coffee for a stronger cup or slightly more water for a lighter cup.
| Water | Coffee | Best For |
|---|---|---|
| 10 oz | About 18 g | Single cup |
| 12 oz | About 21 g | Large single cup |
| 16 oz | About 28 g | Two smaller cups |
| 24 oz | About 43 g | Two large cups |
How to Make Pour Over Coffee
Follow these steps for a clean, balanced pour over brew.
1
Heat Water
Heat water to about 195–205°F. Let boiling water sit briefly before pouring.
2
Rinse Filter
Place the filter in the brewer and rinse it with hot water to remove paper taste and warm the brewer.
3
Add Coffee
Add medium to medium-fine ground coffee and gently level the coffee bed.
4
Bloom Coffee
Pour a small amount of water over the grounds and wait 30–45 seconds.
5
First Pour
Pour slowly in circles from the center outward, avoiding the filter walls when possible.
6
Continue Pouring
Add water in controlled pulses, keeping the coffee bed evenly saturated.
7
Let Drain
Allow the water to drain fully through the coffee. Total brew time is usually around 2:30–4:00 minutes.
8
Serve
Remove the brewer, swirl the coffee gently, and enjoy while fresh.
What Is the Bloom?
The bloom is the first small pour at the beginning of a pour over brew. Fresh coffee releases carbon dioxide when hot water touches the grounds. Letting the coffee bloom for 30–45 seconds helps improve extraction and can create a sweeter, more balanced cup.
- Use about twice as much water as coffee for the bloom.
- Make sure all grounds are evenly wet.
- Wait 30–45 seconds before continuing the pour.
- Fresh coffee will usually bloom more visibly than stale coffee.
Best Grind Size for Pour Over
Pour over coffee usually works best with a medium to medium-fine grind. The grind should be finer than French Press but coarser than espresso.
Too Fine
Can slow the brew down too much and create bitter, over-extracted coffee.
Too Coarse
Can drain too quickly and create weak, sour, or under-extracted coffee.
Just Right
The water should drain steadily, with most brews finishing around 2:30–4:00 minutes.
Need Help?
When ordering coffee, choose a pour over grind or whole bean if you grind fresh at home.
Common Pour Over Mistakes
Skipping the Bloom
The bloom helps fresh coffee release gas and improves overall extraction.
Pouring Too Fast
Fast, uneven pouring can create weak spots and uneven extraction.
Grinding Too Fine
A grind that is too fine can clog the filter and make the coffee bitter.
Grinding Too Coarse
A grind that is too coarse can make coffee taste thin, weak, or sour.
Using Stale Coffee
Pour over brewing highlights coffee quality, so stale coffee is easier to notice.
Not Measuring
Using a scale improves consistency and helps you repeat the same great cup.
