What’s the Difference? Washed, Natural, and Honey-Processed Coffees Explained


At French Settlement Roasting Co, we’re proud to offer premium, organic specialty-grade Arabica coffee, roasted in small batches with care and intention. One of the most fascinating — and often overlooked — elements that shapes your coffee’s flavor profile is how the beans are processed after harvest.

Let’s break down the three main methods — washed, natural, and honey-processed — and how they impact the final cup. We’ll also point you to some of our own coffees that showcase each style!


☕ Washed (Wet) Process — Clean, Bright, and Classic

The washed process is the most common method in specialty coffee, and it’s used in the majority of our offerings here at French Settlement Roasting Co.

In this method, the coffee cherries are pulped to remove the fruit layer, then fermented in water to clean off the mucilage before being dried. This produces a clean and consistent cup that highlights the true character of the bean — meaning you’ll taste more of the origin (like soil, altitude, and varietal), rather than the fruit of the cherry itself.

Flavor Profile: Bright acidity, crisp clarity, and pronounced notes like citrus, florals, or chocolate.


☕ Natural (Dry) Process — Fruity, Bold, and Rustic

Our Ethiopian coffee is a stunning example of a natural-processed bean — a method that dates back centuries.

In the natural process, the whole coffee cherry is dried with the fruit still on the bean. This imparts more of the cherry’s sugars and fruitiness into the coffee, producing a sweet, bold cup that’s packed with wild, juicy flavors.

Flavor Profile: Berry-forward, tropical fruits, wine-like, with fuller body and complex sweetness.

☕ Honey Process — Balanced, Sweet, and Smooth

Our Nicaraguan Blend is a great introduction to the honey process, which sits between washed and natural methods.

In this technique, the skin of the cherry is removed, but some of the sticky mucilage (the “honey”) is left on the bean during drying. The result is a balanced coffee with the sweetness and body of naturals, but the clarity of washed coffees.

Flavor Profile: Silky body, caramel sweetness, mild fruit, and smooth finish.
